Chinese Eggplant

Chinese eggplants are similar to the traditional western eggplant you might recognize but they are usually longer (12-18inches) and a lavender color. They have fewer seeds making them more tender and a little less bitter with a mild, sweet flavor. Chinese eggplants are most often used in stir-frys and they can also be roasted, grilled or fried.

Tips for Selection

Choose eggplant that is firm, heavy for its size, and that has glossy, unblemished, deep lavender colored skin.

Refrigerate in plastic bag for up to 1 week.
