Malanga white, considered the “true” malanga, is a member of the Araceae family. The crunchy root vegetable resembles a yam and once cooked it has a unique nutty taste with a texture similar to a potato. The root is popular in Cuban and Puerto Rican cuisine and often used in soups, stews, or boiled and mashed.
Crystal Valley malanga is available year-round from Costa Rica.
Look for malanga that is firm and free of blemishes or soft spots.
Whole, unpeeled malanga can be stored like a potato in a cool, dark place. If peeled, it can be wrapped and refrigerated.
